Catering Manager – McDonald Jones Stadium

Reporting to the Head of Specialty Venues, the Catering Manager is a flexible, highly organised team player with proven experience in a similar large scale food and beverage role. The focus of this position is to lead a team of catering services professionals at McDonald Jones Stadium and manage the Catering program across the venue.
The key responsibilities of the position are:
• Responsible and accountable for the end to end delivery for retail catering, premium product and non-event day activity including all commercial outcomes (profitability) for the specific site/s under management.
• Responsible for the cost of goods as it relates to the effective management of stock within operational areas to deliver on projected trade to include forecasting, requisitioning, receipt of goods, storage, distribution, waste and returns.
• Responsible for the approval of labour (as it relates to delivering service and cost outcomes relative to pre-determined event and non-event day labour templates (deployment plans))
• The accountability for the management of all operational overhead costs in line to budget guidelines.

The key skills and attributes required are:
 Proven experience in leading and managing the catering operation in a multi-faceted catering environment.
 Strong financial acumen and business unit management capability.
 Strong literacy, business writing and communication skills.
 Responsible Service of Alcohol (RSA) competency certification.
 Diploma or degree qualification in events, hospitality management or similar discipline is desirable.
 Understanding of event management software such as Ungerboeck (USI) is desirable.
